In honour of the fact that my lovely husband with the help of my brother is putting in a new kitchen, I thought I would make some goodies to keep them going (the fact that I was craving chocolate had nothing at all to do with it. Honest).
May I present: Tiffin!
One of the simplest things on earth to make yet one of the most delicious.
Recipe:
300g Good chocolate (I use 200g dark and 100g milk – for children you might want to use all milk)
150g unsalted butter
300g digestive or chocolate digestive biscuits smashed to crumbs with some lumps left for texture
300g dried fruit and nuts to taste ( I use 100g each raisins, sultanas and chopped nuts)
Method:
Put the chocolate and the butter in a glass bowl over a pan of simmering water to melt (you can use a microwave if you prefer).
Weigh out and smash the biscuits (McVities do 300g packets)
Weigh out fruit and nuts and combine with the smashed biscuits
Once the chocolate and butter have melted, remove from heat and stir in the rest of the ingredients.
When well mixed, tip into a baking tray. I use one which is about 20cmx30cm and 2cm deep but you can use a deeper, smaller one if you prefer. I also line the tray with cling film (saran wrap) to make it easier to get the tiffin out later.
Splodge it around and smooth gently with the back of your mixing spoon.
Put it in the fridge and leave it alone for at least an hour.
Cut into whatever sized pieces you prefer and enjoy!
